Lauki Kofta Recipe | Bottle Gourd Recipe | Vegetarian Recipe – Lauki Kofta curry is a delicious Indian curry which is made with tomato, onion, Indian spices & koftas made of bottle guard, besan (Chickpea flour). Lauki Kofta can be served with Rice, Chapati (Roti), Naan or Rumali roti. Lauki Kofta recipe is illustrated step by step with video & photos below.

Ingredients
Let Us Quickly Check Out The Ingredients To Prepare Lauki Kofta Recipe:
  • 1 piece Bottle Gourd
  • 1 Cup Gram Flour
  • 1 Tsp Red Chili Powder
  • 1 Tsp Fennel Seeds
  • Salt to taste
  • Oil for Frying
  • 1 Tbsp Olive Oil or any oil
  • 1 Tsp Cumin Seeds
  • 4-5 pieces Black Pepper
  • 1 piece Dry Red Chili
  • 2-3 pieces Green Chilis (finely chopped)
  • 1 Cup Onion Paste
  • 1 Tbsp Ginger Garlic Paste
  • 1/4 Tsp Asafetida (Hing)
  • 1 Tsp Turmeric
  • 1 Tsp Red Chili Powder
  • 1 Tbsp Coriander Powder
  • 1 Tsp Dry Mango Powder
  • 1 Cup Tomato Puree
  • 1 Tbsp Dry Fenugreek leaves (Kasuri Methi)
Instructions
Let us check out the steps to make delectable Lauki Kofta :
  1. At first, peel the skin of Lauki ( Bottle Gourd) and grate it.

  2. Squeeze water completely from grated lauki.

  3. Add 1 cup besan to grated lauki to make Koftas.

  4. Now add  Red chili powder, Fennel seeds & salt to the mixture.

  5. Mix all ingredients & it forms a thick consistency and keep the mixture aside.

  6. Take oil for frying and heat it to a medium flame.

  7. Use an ice cream scooper to add koftas to hot oil for frying.Fry 5-6 koftas at one time.Once golden brown then take it out & keep it aside.

  8. Let's make curry now. Heat a pan on medium flame & add 1 Tbsp oil.

  9. Once the oil is hot, add cumin seeds, black pepper, dry red chili, green chilies.

  10. Add Onion Paste and saute 2-3 minutes. 

  11. Now add 1 Tbsp of ginger-garlic paste, hing, turmeric, Kashmiri red chili powder, coriander powder, dry mango powder & Mix all together.

  12. Next, simmer for 5 minutes & add tomato puree.

  13. Once the oil separates, add 1/2 cup water and let it simmer for 5 more minutes.

  14. Further, add salt & dry fenugreek leaves & Garam Masala for final touches.

  15. Finally, add koftas to the curry and its ready to serve.

  16. Koftas can be served with chapati, rice or Naan.
